Nihari is a spicy stew based dish, made by slow cooking meat along with the bone barrow and a homemade spice blend. It is one of the most traditional recipes of Old Delhi .

Ingredients:

  • Cumin seeds – 1 tablespoon 
  • Fennel seeds – 1 tablespoon 
  • Green Cardamom – 5 
  • Black cardamom – 2
  • Cloves – 5 
  • Bay leaf – 1 large
  • Cinnamon – 1 inch stick
  • Grated nutmeg – 1/2 teaspoon
  • Mace – 1 blade
  • Ginger – 1 inch piece
  • Black peppercorns – 10

(You can skip the black cardamom if it’s not available in the Indian store)

Instructions:

Dry roast all the spices in a wide bottomed pan until they’re fragrant. Cool them and grind to a fine powder.  Use this in your mutton/goat recipes to add more flavor and heat!
