Orange Chicken – Panda express style!

This recipe might look like it requires a lot of ingredients but they’re readily available in most kitchens. It takes very less time to cook and you can make it anytime you crave some Chinese food! Ingredients:

  • Marination:
  • Boneless Chicken – 1 kg(2.5 pounds) Cut into bite-sized cubes 
  • Turmeric powder – 1 teaspoon
  • Red chilli powder – 1 tablespoon
  • Coriander powder- 1 tablespoon
  • Cumin powder – 1 tablespoon
  • Ginger garlic paste – 1 teaspoon
  • Yogurt – 1/4 cup
  • salt – 1 teaspoon
  • For the batter:
  • Cornstarch – 2 tablespoons 
  • Rice flour – ¼ cup 
  • All purpose flour(maida) – ½ cup 
  • (for Gluten-free version = Cornstarch – ¼ cup + Rice flour – ½ cup)
  • Salt – 1/2 teaspoon
  • Ground black pepper – 1 teaspoon 
  • Vegetable Oil – ¼ cup
  • For the Sauce:
  • Sesame oil – 1 teaspoon  
  • Low sodium Soy Sauce – ¼ cup (preferably gluten-free) 
  • Vinegar – ¼ cup 
  • Orange Juice – ¼ cup + 3 tablespoons (divided)
  • Water – ¼ cup 
  • Cornstarch – 1 teaspoon 
  • Brown Sugar – ¼ cup (substitute with honey)
  • Minced Garlic – 2 cloves 
  • Crushed Red Pepper Flakes or dried red chillies – 1 teaspoon 
  • Orange Zest – 2 tablespoons 
  • salt to taste
  • Green Onions – to garnish 

Directions: 

  1. Marinate the chicken for 30 minutes with all the ingredients listed under marination.
  2. Heat a heavy-bottomed pan or wok over medium-low heat and add ¼ cup of oil. 
  3. Mix 2 tablespoons cornflour, ¼ cup rice flour and ½ cup all purpose flour(or for gluten-free version mix ¼ cup cornstarch  & ½ cup rice flour)in a large bowl and season with salt and pepper, toss the chicken in the flour until evenly coated. 
  4. Once the oil is hot, drop the chicken one by one (leaving enough space between each of them). Cook stirring occasionally until all the chicken is cooked through and is golden brown and crisp. Remove the chicken pieces and place them on a plate with a paper napkin to absorb the excess oil. 
  5. In a small bowl, mix together soy sauce, vinegar, orange juice & zest, sesame oil, water, brown sugar/honey, garlic & red pepper flakes with 1 teaspoon cornstarch until well combined. This will be the sauce for the chicken. 
  6. Into the same pan, Pour the contents of the small bowl and stir on medium flame until thickened.
  7. Turn off the stove and add the chicken to the sauce and toss to coat evenly. drizle 3 tablespoons of orange juice and mix again(gently).
  8. Garnish with some green onions. Serve it immediately with some fried rice or hakka noodles.
